What do our food safety training courses cover?

There are different levels of food safety qualification required for different levels of involvement with food. FMC offers accredited Level 1-3 awards in catering, retail and manufacturing.

Level 1 Award in Food Safety in Catering

The RQF-accredited Level 1 Award in Food Safety is aimed at individuals working in, or about to commence work in, low-risk food handling work. Staff in need of this qualification can be in roles such as bar work, health care workers, kitchen porters, waiting staff and more.

The objective of this qualification is to prepare learners for employment, or to support a current position within a low-risk role, where there is an element of food handling. This could include bar workers, waiting staff, health care workers, kitchen porters and stock/store room staff.

Learners gaining this qualification will know that food safety is the responsibility of everyone involved in the storage, preparation, processing, packing and handling of food. Its topics are regarded by the Foods Standards Agency as being important to maintaining good practice in the production of safe food.

Typically, this course is delivered over 3 hours and is assessed via either a multiple-choice exam or an open response workbook.

To complete the Level 1 Award in Food Safety in Catering (RQF), learners must complete the one unit contained within the mandatory group“Food Safety Awareness in Catering”

Topics covered on the course include:

  • Understand personal responsibilities for food safety in a catering environment
  • Understand the importance of personal hygiene in a catering environment Processing
  • Understand the importance of keeping work areas clean and hygienic in a catering environment
  • Understand how to keep food safe in a catering environment

Entry requirements

To register on to this qualification, learners are required to be 14 years of age or above.

It is also advised that learners have a minimum of Level 1 in English and maths, or equivalent.

On successful completion of this qualification, learners may wish to continue their development by undertaking one of the following qualifications:

Level 2 Award in Food Safety in Catering (RQF

Level 2 Award in Food Safety in Catering

Intended for employees working in catering and hospitality, or those about to start, this RQF-accredited qualification ensures learners understand the importance of proper food handling and how to carry it out.

The objective of this qualification is to prepare learners for employment in catering role, or to support a role in the workplace.

Learners gaining this qualification will know that food safety is the responsibility of everyone involved in the storage, preparation, cooking service and handling of food. Its topics are regarded by the Foods Standards Agency as being important to maintaining good practice in the production of safe food.

The total qualification time for this award is 7 hours. and is assessed via either a multiple-choice exam or an open response workbook.

To complete the Level 2 Award in Food Safety in Catering (RQF), learners must complete all units contained within the mandatory group ""Principles of Food Safety in Catering""

Level 3 Award in Food Safety in Catering

This RQF-accredited Level 3 in Food Safety course is designed for those working at, or looking to progress to, an advanced or supervisory level within the catering industry.

The objective of this qualification is to support a role in the workplace and give learners personal growth and engagement in learning. The qualification is designed for learners who wish to progress to higher or supervisory level within a food catering business.

Topics include ensuring compliance with food safety legislation, the application and monitoring of good hygiene practice, how to implement food safety management procedures and the application and monitoring of good practice regarding contamination, microbiology and temperature control.

Assessment method: Multiple-choice examination

Guided learning hours (GLH): 20

Total qualification time (TQT): 25

To complete the accredited Level 3 Award in Food Safety in Catering (RQF), learners must complete all units contained within the mandatory group “Food Safety in Catering”

Topics covered on the course include:

  • Understand the requirements for ensuring compliance with food safety legislation
  • Understand the application and monitoring of good personal hygiene practice, training and competency
  • Understand the application and monitoring of good practice to keep work areas clean, hygienic and free from pests
  • The application and monitoring of good practice regarding contamination, microbiology and temperature control
  • Understand how to implement food safety management procedures
